Pickled mustard tuber is a semi-dry, non-fermented pickle made from stem mustard and is one of China's famous specialty products, known alongside French cornichons and German sauerkraut as three of the world's famous pickles. It first appeared in Fuling, Sichuan, China in 1898, then called "Fuling pickled mustard tuber." It's called "pickled mustard tuber" because the processing involves pressing to remove water from the vegetable.

  What kind of vegetable is used to make pickled mustard tuber?

  The raw material for pickled mustard tuber is the plump, tuberous stem of a stem mustard plant. The fresh tuber can also be used as a small dish, stir-fried with meat or made into soup, but it is more often used for pickling. After salting and pressing the tuber to remove some of the water, it gets its name. Then, salt and more than ten kinds of spices and seasonings (dried chili powder, peppercorns, fennel, sand ginger, pepper, zingiber, licorice, cinnamon, white wine, etc.) are added, and it is put into a jar, sealed, and stored in a cool place.
