Methods for pickling Chinese chives

200g scallions, 30g rock sugar, 8g salt, 30g white sugar, 30g white vinegar, 8g soy sauce, 125g cooled boiled water.

  There are various methods for pickling Chinese chives. Here are a few common methods:

  Sweet and Sour Pickled Chinese Chives

  Ingredients: 200g Chinese chives, 30g brown sugar, 8g salt, 30g white sugar, 30g white vinegar, 8g soy sauce, 125g cooled boiled water.

  Preparing the chives: Remove the roots and leaf necks of the chives. Wash thoroughly, sprinkle with salt and marinate for 1 hour, stir, and marinate for another hour. Drain the water.

  Pickling steps: Put brown sugar and white sugar in a jar, pour in soy sauce and white vinegar. After dissolving, add the chives and cooled boiled water or pure water, ensuring the chives are submerged. Seal and refrigerate for about 7 days.

  Spicy Pickled Chinese Chives

  Ingredients: 1500g Chinese chives, 120g salt, 150g white sugar, 150g white vinegar.

  Preparing the chives: Wash thoroughly, remove the roots and tops, and air-dry the surface.

  Pickling steps: Boil the salt and sugar, let cool, and add white vinegar. Stir well. Place the prepared chives in a waterless and oil-free container, pour in the prepared water to cover the chives, sprinkle with high-concentration white wine, seal, and let marinate at room temperature for about 7 days.

  Soy Sauce Pickled Chinese Chives

  Ingredients: Washed and dried Chinese chives, small peppers, and soy sauce.

  Preparing the chives: Mince the chives and small peppers.

  Pickling steps: Put the minced chives and peppers in a large bowl, add soy sauce, mix well, and place in a clean, waterless, and oil-free jar. Store in a cool, dry place. Ready to eat in a few days.

  Precautions and Storage

  Tools and containers required: All tools and containers must be waterless and oil-free to avoid contamination.

  Storage method: The pickled chives can be stored in the refrigerator to extend their shelf life.
